DIRITY Bang Bang Wings

Bang Bang Wings with Bayou DIRT on the Big Green Egg.

Killer Wings with So Much Flavor.
If you like sweet, tangy and a little spice. These wings will be for you. These oriental style wings are so amazing on the grill or in the oven. Doing these wings on the Big Green Egg, really brings out the flavor of the wings. The smoke from the Charcoal enhances the flavor of the wings.

Recipe:
3 Pounds of Chicken Wings.
2 cups of Olive Oil. I use Extra Virgin
1/3 Cup of Kosher Salt
1/3 Cup of Chili Garlic Sauce
1/2 Cup of Honey
4 Tbsp. of Bayou DIRT
1 Tbsp. of Low Down DIRT or Original DIRT
1/3 Cup of Siracha or Favorite Hot Sauce
2 Tbsp. of Chili Pepper Flakes
2 Tbsp. of Fresh Minced Ginger
2 Tbsp. of Black Pepper
2 Tbsp. of Sesame Seeds
2 Stalks of Green Onion, cut up.

Marinade
In a big bowl add all of the ingredients, except only use 2 tablespoons of Bayou DIRT. The other two tablespoons will be used to sprinkle on the wings later. Mix all of ingredients really well and put into a zip lock bag. Hold about a 1/4 cup of the marinade to use later. Put the wings inside the bag and shake really well and make sure the marinade is all over the wings. Let it marinade for 1 hour in the fridge. After a half an hour, flip the bag over.

Put the wings on a sheet pan and spread them out. Sprinkle the rest of the Bayou DIRT onto the wings. Put them on an indirect grill, heated to between 350 and 400 degrees. Every ten minutes flip over the wings and baste with the remaining sauce. They will be done about 30-35 minutes. When done plate them and add Sesame Seeds and the green onions on top, and enjoy the wings.

Hint
You can take some of the wing marinade and put it in a pan and heat up to the point of boiling. Let it cool down and use it as a dipping sauce.

DIRTY Cucaracha Shrimp

DIRTY Cucaracha Shrimp

(Great Grilled Shrimp Recipe)
This grilled shrimp recipe has a lot of flavor going on in your mouth. When you make this for your family and friends they are going to love these shrimp.

Recipe:
16-20 count Shrimp or bigger.
1 Cup of Extra Virgin Olive Oil
1/4 Cup of Green Onions or Shallots
1/4 Cup of Finely Diced Cilantro
2 to 3 Cloves of Garlic Diced
2 Tbsp of Red Pepper Flakes
3 Tbsp of Sriracha or any Hot Sauce
2 Tbsp of Low Down DIRT or Original DIRT
3 Tbsp of Bayou DIRT
1/4 Cup of Tequila, plus a shot for you.

Take the shell off the shrimp and devein. In a bag or in a bowl put all of the ingredients together and mix or shake well. Add the Shrimp and mix or shake well. After you have made sure the shrimp are coated, put them in a refrigerator and let sit for 1 hour to marinade. Put the Shrimp on a skewer and then put on the grill. Grill for a couple of minutes and then turn the Shrimp. Add some more marinade to the top of the Shrimp. After a few minutes turn for just a few seconds and take the Shrimp off and enjoy.

Hint
If you want milder shrimp just use the Original DIRT and tone down the red pepper flakes and Sriracha by half.

Dirty Smash Bagel Sandwich on the Camp Chef Griddle (Amazing Breakfast Sandwich)

This breakfast sandwich is truly amazing, but messy. Todd shows you how to make this classic sandwich.

Recipe
2 Slices of bacon
2 Sausage Patties (Sausage Pucks as Todd Calls them)
1 Egg
2 Slices of American Cheese
1 Everything Bagel (Or Bagel of your choosing)
1/2 Teaspoon of Original Todd’s DIRT
1/2 Teaspoons of Bayou DIRT (Roughly)

Put two pieces of bacon on the griddle and cook. At the same time, put Bayou on top of each Sausage patty and press in. Place the sausages on griddle and cook. When the bacon and sausage is almost done, beat one egg with the Original DIRT. Take a bagel and cut in half. Put both pieces of the bagel on to the griddle and press down. When you have the desired crust on the bagel, flip it over and put one slice of cheese on each piece of bagel. Put the egg on top of the flat part of the bagel and then layer the sausage and then the bacon and put the top of the bagel on top. Press the bagel down on to the griddle, until the cheese has started to melt. Slice in half and devour the sandwich. You can thank the DIRT Man later. Enjoy getting DIRTY!!!

DIRTY Juicy Lucy

DIRTY Juicy Lucy (Amazing Hamburger) on Weber Grill and the Camp Chef Griddle

If you ever go to Minneapolis Minnesota, the one food you have to try is the Juicy Lucy Hamburger. Like Philly is know for the Philly Cheesesteak, Minneapolis is known for the Juicy Lucy. This hamburger has always intrigue the DIRT Man and he wanted to see if he could make a amazing Juicy Lucy using Todd’s DIRT Seasonings. Well after many tries, Todd has come up with his version and it is amazing. Watch The DIRT Man show you how to make this great burger.

Recipe (Makes two hamburgers)
One Pound of 80/20 Hamburger or 4 premade hamburgers
2 Tablespoons of Original Todd’s DIRT (All Todd’s DIRT Seasonings will work.)
2 Slices of American Cheese
2 Slices of Colby Jack Cheese
Hamburger Buns

After making four hamburger patties, you want to sprinkle the Original Todd’s DIRT all over on both sides and press the seasoning into the meat. Take half of the American and cut it off. Fold the piece in half and put on the middle of the hamburger. Do the same with the Colby Jack Cheese. Then add the other two halves like before. Take the second hamburger and put over the top of the hamburger and cheese. With your finders press the sides together and spin until the whole hamburger is done. Then pat all the way around, until you don’t see the seams of the two burgers. Cook them either on the grill, griddle or a frying pan. Put it on a bun and add your fixings. It is pretty simple.

Key
You have to make sure there are no openings around the seams of the two burgers. It has to look like one burger.

ONE CHIP CHALLENGE TAKES ON THE DIRT MAN AND HIS DAUGHTER

This video is Tori and I competing in the challenge. This video has two parts. The first part was eating the chip, and the second is the AFTERMATH. Stay for the whole video. I think you will find it funny. We thought we won, but we did not. Eating this chip is no joke.

Easy Tahini and Hummus recipe made with the Original Todd’s DIRT.

Todd shows you how to make an easy but great tasting Tahini sauce and Hummus, made with the Original Todd’s DIRT seasoning. The Original DIRT gives this Tahini and Hummus a more herbal taste. When you taste this recipe, you are going to make it this way every time.

Tahini Recipe
1/4 Cup of Sesame Seeds
2 Teaspoons of Olive Oil
1/2 Teaspoon of Original Todd’s DIRT Seasoning

In a medium heat dry fry pan add the sesame seeds. Keep stirring the seeds as they heat up and start to turn a light brown color. Only takes between three and five minutes. Put the Sesame seeds into a food processor and mix for two minutes. Push down the mixture that is on the sides. Run the processor again for another minute. Put the Original DIRT in and turn on the processor and slowly add the Olive oil. After about three minutes you have a great Tahini.

Hummus Recipe
1/4 cup of DIRTY Tahini
1 Teaspoon of Granulated Garlic or one clove of fresh garlic
1 Lemon
1 Teaspoon of Original Todd’s DIRT Seasoning
1 Can of Cannellini Beans or Chickpeas
1 Teaspoon of Olive Oil
1-2 Teaspoon of Water
1 stalk of Green Onions (chopped)
1/4 cup of Romano and parmesan cheese (Optional)

In a food processor put the Tahini, garlic, lemon and Original DIRT inside and run for two minutes. Push down the sides of the mixture. Drain the liquid from the beans and add half of the beans into the food processor. Run the processor for three minutes. Add the rest of the beans and process for three more minutes. Then add the Olive oil and run for 30 seconds. Add one teaspoon of water and run for another 30 seconds. Open the top and check on the consistency. If you need to thin it out a little more add another teaspoon of water. At this point the hummus is done. You can add the cheese and process for another minute. This really help with the consistency and adds some flavor. Put the hummus into a bowl and put the green onions on top. Enjoy with Vegetables or Pita chips.

DIRTY Gourmet Mac and Cheese (You will love it)

We are making an amazing gourmet Mac and Cheese. Todd and his lovely wife Holly, team up to make this great recipe and funny video. This recipe is pretty easy. Don’t be fooled this recipe is so good you are going back for seconds and thirds. Enjoy!!
Recipe
1 Cup of Diced Ham
6 Green Onions
2 Tablespoons of Extra Virgin Olive Oil
4 Tablespoons of Butter or Margarine
4 Tablespoons of Flour
4 cups of Milk 2%
4 cups of Monterey Jack Cheese shredded
1/2 of Parmesan and Romano Cheese Shredded
2 Teaspoons of Original Todd’s DIRT
3/4 Teaspoons of Black Cracked Pepper
1/2 Teaspoon of Salt (Kosher)
1 Box of Small Pasta Shells (might say medium on box)

Boil some water and add the pasta shells and cook until done. Dice up a cup of Ham and cut the green onions into little pieces. In a medium heat pan you will add the olive oil, ham and green onions. Cook for a few minutes until ham has some color on it. In a bowl add the pasta, ham and onions. In another pan melt the butter and add the flour to make a roux. Cook the flour for a minute and then add the milk and stir. Add both cheese’s a little at a time and keep stirring. Add the Original DIRT and the salt and pepper. Mix until it thickens up like in the video. Add this to the bowl and mix well. Pour the mixture into a casserole pan and cook at 350 degrees for 30 minutes. Put on a plate and enjoy this amazing gourmet Mac and Cheese.

DIRTY Sausage and Peppers (Wow is this good!)

The DIRT Man creates one of his signature tail gaiting recipes. If you love sausage and peppers, you are going to love this. This recipe can be done in and on your oven or grill.

Recipe
1 package of Brats or favorite Sausage
1 Large Vidalia Onion (Any White onion will work)
2 Orange, Red or Yellow Peppers
1 clove of Garlic
3 Tablespoon of Extra Virgin Olive Oil
1 Tablespoon of Todd’s DIRT Original Seasonings
1 can of beer
Sub Rolls

Heat up your grill on high, or your stove top to medium heat. Place a cast iron pan on the grill or stove top and let heat up. Slice the onions really thin, and slice the Peppers into strips. Put two tablespoons of Olive Oil into the pan. Add the garlic through a garlic press and mix. Add the onions and the peppers to the pan, along with the Original DIRT. Put the sausage on the grill or put in a oven under the broiler. You only want to cook these 20% or so on each side to get good grill marks, or get good color from the broiler. When the sausages look right add them to the pan. Add a half can of beer, enough to cover half of the sausages. Stir every few minutes until the liquid has reduced by half. Put the sausage and the onions and peppers on top of a roll. I hope you really enjoy this sub.

Dirty Hamburgers

Dirty Hamburgers on Big Green Egg

The DIRT Man shows you how to make hamburgers using Todd’s DIRT Seasonings. This is a simple recipe that taste so good.
Recipe
One Pound of 80/20 hamburger
2 Tbsp. of Original DIRT

First thing is get the hamburger really cold. Next put the hamburger into a bowl and put the seasonings over the meat and mix well. Take the hamburger and put enough to fill your hand. Roll the meat like a big meatball and then flatten with your hand. Put the hamburger on a plate and take outside to the grill. Any extra made hamburger, wrap Saran wrap around the hamburgers and then put in a freezer bag. Take them out when you need them for your next meal. I like to add more Todd’s DIRT seasonings on the hamburger before I put on the grill. Original DIRT work great, but I prefer the Salty Sailor on the outside. Cook until desired temperature and enjoy!!

The DIRT Man uses his Camp Chef Griddle to show you how he makes breakfast on the griddle using Todd’s DIRT Seasonings. Starts with cooking bacon. He make DIRTY Hash Browns using the Original DIRT. Hormel’s Corn Beef has with onions, hot sauce, onions and the Bayou DIRT. He also makes two eggs using the Original DIRT. The breakfast taste so good. I have videos on YouTube and toddsdirt.com showing how to make the potatoes and hash. But cooking it on the griddle is so much better.
