Todd makes an amazing side dish called DIRTY Green Bean Casserole using the Original Todd’s DIRT. The DIRT is the missing link for this great recipe taken off the French’s Fried Onion Can. It was a classic recipe and now it is a Hall of Famer.

Recipe

3/4 Cup of Milk, I use 2%
4 Cups of French Style Green Beans
1 Can of Cream of Mushroom Soup
1/4 Teaspoon of Black Pepper
11/3 Cup of French Crispy Onions
2 TBS of Original Todd’s DIRT Seasonings

Put the Green beans in a casserole pan and lay flat in the pan. Put all of the ingredients into the pan, except for half of the Onions. Mix really well and then put the rest of the onions on top. Put in a 350 degree oven for 30 minutes. Enjoy!!!

DIRTY Wonton Shrimp cups

This appetizer is truly one of those things you bring to a party and everyone will love them. They will want this recipe. This is one of the DIRT Man’s favorite appetizers to bring to a party. Get ready to learn how to make this amazing recipe.

Recipe
2 squares (24 ) wonton wrappers

1 tablespoon margarine (melted)

10 ounces medium cooked shrimp (shelled)

2 stalks green onions (chopped)

1/3 cup carrots (chopped)

4 ounces cream cheese (softened)

1 teaspoon garlic (minced)

1 cup mozzarella cheese (shredded)

½ teaspoon Worcestershire sauce

1 Tablespoon Todd’s Chesapeake DIRT (to taste)

Preheat oven to 350 degrees. Spray mini-muffin pans with cooking spray. Brush one side wonton with margarine. Press each wonton margarine side up into each cup. Bake 8 minutes. Remove pan from oven to cool. Reserve 12 shrimp. Finely chop remaining shrimp, green onions and carrots. Combine all ingredients except the reserved shrimp. Fill wonton cups with the ingredients and top with ½ a shrimp. Cook for an additional 5 minutes.

HINT: Food processor works best to chop all these ingredients. These appetizers look great and make a great alternative to all the dips that are generally brought to parties. You won’t take any of these home with you.

Todd make a outstanding appetizer called DIRTY Mushroom Caps. When you take this appetizer to a party. People will be going nuts on how good it is. This recipe is great if you are on a low carb diet. This recipe is not very hard and is great to freeze for future use. You are going to love this appetizer. We hope you enjoy. During the video, Todd did cut the ingredients size down to do this video.

Recipe
24 ounces of Mushroom caps (approx. 48)
1 pound ground Hot pork sausage
4 stalks of Green Onions (Chopped)
1 tablespoon minced garlic
1 tablespoon of Original Todd’s DIRT
8 oz of cream cheese (softened)
4 oz of pepper Jack Cheese (shredded)
Pamesan cheese

Preheat oven to 350 degrees. Spray cooking pan with cooking spray. Sauté sausage, garlic, green onions and Original Todd’s DIRT in a skillet over medium heat until meat is cooked. Drain grease and let cool. Wash the mushrooms really well. Remove stems from the mushrooms and put in a bowl. Save a 1/2 cup of the stems. Place the mushrooms on the pan facing up. Place the stems in a food processor for easy chopping. If you don’t have one, minced the stems to as small a possible. Pour the stems from the processor to the bowl with the sausage, and mix in the cream cheese and Pepper Jack cheese. Place a heaping spoonful of the mixture in each of the mushroom caps. Sprinkle the caps with Parmesan Cheese and cook in the oven for 20 minutes.

DIRTY Sweet Potatoes

Todd shows you how to make this great holiday side dish called DIRTY Sweet Potatoes made with the Chesapeake DIRT. This recipe is really good and is a staple at our Thanksgiving and Christmas dinner. I know it is hard to imagine sweet potatoes with Chesapeake DIRT, but they complement each other well.

Recipe
2 Sweet Potatoes
1/4 Cup of Milk
1/4 Cup melted butter
1 tbsp. of Vanilla Extract
1 tsp of Cinnamon
1 egg
1/4 cup of Sugar
1 tbsp. of Chesapeake DIRT

Topping
1/4 cup of Brown Sugar
1 tbsp. of Chesapeake DIRT
1/4 cup of flour
1/2 Tbsp. of melted butter
3/4 cups of Chopped Pecans

Cook Sweet potatoes at 350 degree for one hour. Check internal temp of potato to be 202 degrees. Take the Sweet potato out of oven and let rest for 15 minutes. Scoop out the potato into a bowl and add all of the ingredients, and mix really well. Move this all into a casserole pan. Now make the topping by putting all of the topping ingredients into a bowl and mix well. Put the topping all over the Sweet potatoes and add the pecans. Put the top on casserole pan and cook in the oven at 350 degrees for 30 minutes. This recipe is so good, you and your family are going to enjoy.

DIRTY Creamed Onions

Today’s DIRTY dish is DIRTY Creamed Onions. This is a perfect Thanksgiving side or a delicious side for any meal. You can use any seasoning you’d like for this recipe though we suggest the Original DIRT. This recipe is in the Let’s Get DIRTY cookbook on page 21.

3 bags of fresh pearl onions (10 ounce each)
1 1/2 cups heavy cream
4 ounces (1 stick) margarine

1 cup sharp cheese (shredded)

DIRTY Smashed Burgers

Todd “The DIRT Man” shows you how to make the Best Smashed Burger’s using the Salty Sailor rub. This is a really easy recipe that you and your family are going to love. Todd is cooking on his Camp Chef Griddle.

Recipe
1 pound of 80/20 Hamburger Meat
Salty Sailor Rub
1 large Onion
1 Tomato
American Cheese slices

DIRTY Onions
1 tablespoon of Original DIRT
Olive oil

Take the meat and put in a bowl. Mix in 1 tablespoon of Salty Sailor rub. Mix really well. Take 1/4 of the hamburger meat and put in your hand. Roll the meat around your hand and then flatten the meat real gently. Sprinkle Salty Sailor on both sides of the burger. Slice the Onions pretty thin. On a medium heat griddle, put a tablespoon of olive oil on the griddle and using a spatula spread the oil in a big circle. Place the onions on top of the oil and mix. Take the Original DIRT and sprinkle all over the onions. cook the onions until desired doneness. Place the hamburger on the griddle. After 4 to 5 minutes or until half the hamburger has been cooked and then flip. Put American or your favorite cheese on top of the burger. When the hamburger is done, Put the burger on a bun and place the DIRTY Onions on top.

DIRTY Lamb Chops

Todd Shows you how to make the most amazing Lamb Chops. This is a very simple recipe only using a few ingredients. The Original Todd’s DIRT Seasoning makes lamb taste amazing.

Recipe
Extra Virgin Olive Oil Like Windmill Creek
Garlic (optional)
Original Todd’s DIRT

Drizzle the Olive Oil over the meat. Using your hand make sure the olive oil is all over the meat. Take Minced Garlic if you like and spread all over the chops. Sprinkle the Original DIRT all over the lamb chops. Grill over high heat for 2-3 minutes each side to reach medium rare. Enjoy!!!!

DIRTY Shrimp Scampi

The DIRT Man shows you how to make one of his signature dishes called DIRTY Shrimp Scampi. This recipe use three of his Todd’s DIRT Seasonings to make this amazing dish. Make this recipe for you and your love ones. Sit back an enjoy watching their faces light up.

Here is the Recipe
16 oz of medium 16-20 count Shrimp
1/8 of a cup of Extra Virgin Olive Oil
5 Tbs of Margarine or 3/4 stick of butter
2 Tbs of Original Todd’s DIRT
1 1/2 Tbs of Chesapeake DIRT
1 1/2 Tbs of Bayou DIRT
1 TSP of Black Pepper
1 TBS of Minced Garlic
1/2 Medium Onion diced
1 Tomato diced
1/4 cup of Grated Parmesan cheese
16 oz of Linguine Noodles

In a hot pan put the olive oil and garlic in a pan and mix. After 2 minutes add the seasonings to the pan and mix. Once everything starts simmering add the onions. After a few minutes add the Shrimp. Keep mixing everything together and after the shrimp is half cooked add the tomatoes. Boil the Linguine and drain the water. Put the noodles in a bowl and put half of the Parmesan cheese over the top and mix. Add the Shrimp mixture and incorporate with the noodles. Add the rest of the Parmesan cheese and mix some more. Serve and enjoy!

The DIRT Man brings you one of his favorite dishes from Jamaica an shows you how to make one the best Jerk Chicken you will taste. Todd got this recipe from Sam The Cooking Guy. Here is the recipe for Jerk chicken

5 Chicken Breast or Thighs
Fresh Cilantro diced fine (a good amount like 4 tablespoon)
2 inch piece of Fresh Ginger, peeled and cut into pieces
2 tablespoon of Garlic or 4-5 cloves
2 habanero peppers, cut into a few pieces. Cut off the stem.
1 quarter cup of Turbinado sugar or brown sugar
1 quarter cup of olive oil
1 teaspoon of Worcestershire sauce
2 teaspoons of lemon and lime juice
1 teaspoon of ground Ginger, Allspice​ and cinnamon
1 whole white onion cut in quarters
3 green onions cut up
2 Tablespoons of Original DIRT ( you could use Bayou)
