Bang Bang Wings with Bayou DIRT on the Big Green Egg.
Killer Wings with So Much Flavor.
If you like sweet, tangy and a little spice. These wings will be for you. These oriental style wings are so amazing on the grill or in the oven. Doing these wings on the Big Green Egg, really brings out the flavor of the wings. The smoke from the Charcoal enhances the flavor of the wings.
3 Pounds of Chicken Wings.
2 cups of Olive Oil. I use Extra Virgin
1/3 Cup of Kosher Salt
1/3 Cup of Chili Garlic Sauce
1/2 Cup of Honey
4 Tbsp. of Bayou DIRT
1 Tbsp. of Low Down DIRT or Original DIRT
1/3 Cup of Siracha or Favorite Hot Sauce
2 Tbsp. of Chili Pepper Flakes
2 Tbsp. of Fresh Minced Ginger
2 Tbsp. of Black Pepper
2 Tbsp. of Sesame Seeds
2 Stalks of Green Onion, cut up.
In a big bowl add all of the ingredients, except only use 2 tablespoons of Bayou DIRT. The other two tablespoons will be used to sprinkle on the wings later. Mix all of ingredients really well and put into a zip lock bag. Hold about a 1/4 cup of the marinade to use later. Put the wings inside the bag and shake really well and make sure the marinade is all over the wings. Let it marinade for 1 hour in the fridge. After a half an hour, flip the bag over.
Put the wings on a sheet pan and spread them out. Sprinkle the rest of the Bayou DIRT onto the wings. Put them on an indirect grill, heated to between 350 and 400 degrees. Every ten minutes flip over the wings and baste with the remaining sauce. They will be done about 30-35 minutes. When done plate them and add Sesame Seeds and the green onions on top, and enjoy the wings.
You can take some of the wing marinade and put it in a pan and heat up to the point of boiling. Let it cool down and use it as a dipping sauce.
